Foody Friday - Mediterranean Burgers20:07
Due to having to change our diets we've started looking at healthy recipes and 'The Hairy Biker's' diet cookbooks have quickly become our go to when looking for something to cook.
This is the first recipe we've tried. It's packed full of flavour. We decided to make homemade wedges.
1 Small Courgette
1 Medium onion
400g Lean Mince Beef
2 Garlic Clove
1 tsp Dried Oregano
1 tsp Dried Basil
1 tbsp Tomato Puree
1 tsp Sunflower oil
4 Ciabatta Rolls
Makes 4 Burgers
Start by measuring out all the ingredients and putting it all together in a bowl.
Then mix the mince, courgette, garlic, oregano, basil and onion together until they are Throughly combined.
You then separate the mixture to make 4 burgers. We put 2 in the freezer and had 2 for dinner.
Brush frying pan with the oil and then place the burgers in the frying pan. Cooking them for 10 minutes.
We couldn't get cibatta rolls so we used wholemeal rolls.
To make our wedges we cut up new potatoes and put 1 tbsp sunflower oil and seasoned. We then put them in the oven at 200 for 25mins.
The burgers tasted amazing. The original recipes says normal onions but I prefer the taste of a red onion. We also didn't have cibatta rolls. We used 25g mature cheddar as it's meant to be 100 calories. As we are trying to monitor the amount of calories we have.
