Lemon and Poppy Seed Cake Recipe19:47
85g Unsalted Butter
246g Caster Sugar
1 1/2 Lemon Zest
16g Poppy seeds
164 Semi Skimmed Milk
235g Plain Flour
2 Teaspoons Baking Powder
Pinch of Salt
3 Egg Whites
1 Lemon (Juice & Zest)
50g Caster Sugar
245g Icing Sugar
1 1/2 Juice of a Lemon
Start by getting your ingredients out and preheating the oven to 170c .
Begin by mixing the butter, sugar, poppy seeds, Lemon Zest together. It may look a little strange but thats ok.
Then add in the milk gradually.
In A separate bowl mix together the flour, baking powder and salt.
Now fold this in the starting mixture until completely combined.
In a separate bowl whisk the egg whites until the form stiff peaks. The fold into the mixture. Do be careful not to over mix. The put into your prepared cake tin.
The cake should go in for about 30 minutes, but it should spring back when pressed.
in the last 5 minutes of the cake baking start to make the syrup.
Mix together the lemon juice, zest and sugar.
When the cake is ready take it out the oven and and get out of cake tin and then pour over Lemon Syrup.
When the cake has cooled you can now make and pour over the Lemon Icing and sprinkle some poppy seeds for decoration.
